Quinoa salad gluten free
An easy recipe that’s gluten free and delicious!
1 cup of quinoa
2 cups of water
1 plum tomato diced
1 ½ tablespoon of white onion
1 cup of chopped baby spinach
¾ cup of chopped peppers (any colors you like)
½ cup corn
½ fresh lime- juice squeezed out
½ fresh lemon- juice squeezed out
½ cup rice wine vinegar
Salt and pepper to taste
Wash all ingredients throughly to remove pesticides if not using organic produce
Add water and quinoa to a medium size sauce pan and bring to a boil.
Reduce heat to medium and simmer for approx 10 to 15 minutes or until water is absorbed.
Simply add all of the ingredients, mix together well and chill covered in the refrigerator for at least one hour before eating.
Serves 4-6 people
